The Old Fashioned, Small Batch Way
Maple Syrup is a labor of love. We are a small producer, and very caring in our craft. Care is taken to treat our trees well, keep our equipment clean, process the sap quickly, and make syrup only when the conditions allow the finest tasting ambrosia possible. If cleanliness isn't high priority maple syrup can have off flavors from mold, fungus and bacteria growth. If you want the very tastiest maple syrup that's sweet, silky smooth, with a soft but pronounced maple flavor and no off flavors, try ours. It is fancy grade and we taste every batch many times. No second quality gets bottled by us.

We have a small and younger sugar bush with a few older maple trees. Our techniques mix old-fashioned care and wood slow boiling with modern small taps to minimize impact on our maple trees. We use a modest amount of tubing to link small groups of maple trees into one bucket. We gather those buckets using a four wheel drive tractor hauling a tank, and pour each bucket into the tank as we make the rounds. We do not use a heavy duty vacumn pump to suck the sap out of the trees. We have no high tech reverse osmosis system to extract water from the sap and concentrate the sugar. Instead we boil the old fashioned way with a wood fueled small evaporator and finish it off on the gas range. That way we can watch the syrup carefully and the boiling is slow and gentle..
